Not Exactly a Financial Entry

It's probably obvious from my nickname that I have a sweet tooth (probably too sweet!). Anyway, I wanted to treat my colleagues (pretty much everyone treats everyone else from time to time, people bring cakes or snacks etc), so I made a chocolate cake. Turned out to be a success, as nothing was left but crumbs by the end of the day!

In case anyone's interested, here's the recipe:

- 1 1/2 cup all purpose flour
- 1/2 cup cocoa
- 1 teaspoon baking powder
- 1 cup apple puree without sugar (can be ready made or homemade - I usually make it as it's difficult to find it ready-made)
- 1/3 cup low fat yoghurt
- 1 egg
- 3 egg whites
- vanilla powder (1 dose)
- 1 1/3 cup sugar
- 3 tablespoons of crushed walnuts
- 1/2 teaspoon cinnamon powder


Mix the flour, the cocoa, the baking powder, the vanilla and the cinnamon.

Beat the apple puree, the yoghurt, the egg and the egg yolks. Add the sugar and keep beating until the sugar dissolves.

Add the flour mixture and mix gently, until the ingredients are mixed well. Empty into a greased baking dish and bake at 180 degrees Celsius for 30 - 35 minutes, or until a knife immersed comes out clean.

You can sprinkle some powdered sugar on top after the cake cools down completely (I never do, but I think it makes the cake look more impressive).
